Old Indian tradition ain't it??? Young warrior, hunter, etc would eat the heart of whatever he killed so he could get it's courage. Guess the oysters were for the sissies that didn't have quite enough themselves :shock:

Fresh in season or from the freezer we have them year around best with a rocky mountain brew and fried rattle snake :-) Most of the cookouts are over till next year though :(

it's oyster season around here, but the ones we eat come from the sounds. the local oysters are really good, but they are about 40 dollars a bushel if you get the good ones and not the sorry ones they import from the Gulf.

Round the bend steak house, just about two miles East of SAC Museum. Have pork, beef and turkey, every day. They reportly are the testicle capitol of the country. Every father's day week end they have a large get together

Well, they make a big deal of advertising the annual "Testical Festival" at Olean, Mo. It is a little hole in the wall hangout for ner-do-wells best I can figure.

I went about 3 years ago. They charge a fee just to enter the town! Then when I got there, they were out of nuts. I was Pi$$ed. and the duffases at the gate would not give me back my money.

It was a bunch of red-neck refugees from the law, old hippies, from the looks of them.

I would not go within 20 miles of the place.

But I do love hog fries, calf fries, and brain sandwhiches!

Times would have to be hard for me to eat mountain oysters, but cutting hogs is not bad. You cut a slit over each testicle, push them out, and cut the tubes. There are 3 layers you have to cut through and you need to use something really sharp and thin like a scalpel or a new single edged razor blade. A pocket knife or something like that will work but is not the best choice at all. Definitely don't use a snap off razor knife. We tried one of those on a goat years ago and it was not very sharp at all.

When I was a kid and we raised hogs, we had to do this all the time. We would give Grandpa a call, because he was our "cutter". My brother and I caught the pigs, my dad held them down and Grandpa would do the slicing.
I still remember our dogs were outside of the hog pen just waiting for the goodies. It's amazing how well they can catch the "prizes" when there is competition.
