Dug 600 pounds of potato's out of a field of ours we rented out in a corner that was too wet at the time to finish digging.Got them out with a silage fork,threw the ones away that got stabbed,bagged them and put them in the basement,should be good for awhile lol.
 
If the basement isn't too warm,they will keep for atleast 6 months,if it's too warm and or damp,they will sprout.50 or more years ago in these parts,every farm house had their basement filled to the floor joists with potato's,no joke.
 
What you need is 40 degrees F and 90% humidity for best conditions to store potatoes. Thats why dirt floors were critical to old root cellars, to keep humidity up. Its also best to keep apples in another cellar since the gas they give off will encourage potatoes to sprout.
To get really good home fries, peel the potatoes the night before, store overnight in water (or vodka) to take out as much starch as possible, then fry them up in oil that is very hot.

We have a root cellar outside that is filled with probably 600-700 lbs of potatoes this year, and they usually last until may or june. We generally run out of potatoes before they go bad.
 
He's not kidding..... Many houses had a dirt floor, stone walled basement. Some didn't have the stone walls. Called them Michigan basements.
we built a house in the early '60s and my dad had the basement designed as a potato cellar. I finally cemented the floor, years later.

Nowadays, they have large warehouses, climate controlled to store the potatoes, haul them in and out by the semi-load.
 
I boil or microwave the spuds a little so they do not require as much pan time.
The oil of choice is bacon grease.
Near finish time I pull back the spuds to the edges.Then saute some chopped onions then stir them through the spuds.
Heinz ketchup on the side of course.
 
just wanted to add something to what's already been mentioned...DO NOT wash the potato's after digging...brush dirt off with your hand and spread them out a little so they can thoroughly dry before bagging...i've kept em as long as 9 months like that.
 
You can take the sprouts off potatoes you want to eat.Satina potatoes will keep into August if sprouted.A fellow told me that he took the sprouts off some potatoes ,then planted them.He couldnt understand why they didnt grow.I had a hard time not laughing but do laugh now when I think about the sprouted potatoes that didnt grow.
