Made a batch of bean soup today. Got to thinking, what beans produce navy beans? I know they're not soy beans, even if they are about the same size.

Technically, white pea beans..as others stated, closely related to the kidney, cranberry, blacks and pintos. Very different species than soys.
 
I just made a gallon pot today also. Try this recipe.
1 pqckage 16 oz Navy beans, soak overnught.
1/2 package 8oz baby lima beans, soak overnight.
2 smoked ham hocks
1 cup celery
1 cup diced white onion
1/2 lb deli ham cut in one thick slice. Diced it makes about a cup.

In the morning simmer hocks 30 minutes,in 3/4 gallon of good water. Add the Navy beans, simmer another 20 minutes. Add the limas, and deli ham, another 20 minutes. Add the celery and onions and simmer the last 20 minutes. Remove hocks and trim the ham off and add back to pot. Season to taste. White pepper and salt for sure.

Serves about 14

To be technical, navy beans, pinto beans, kidney beans, etc are all just varieties of Phaseolus vulgaris, the beans also grown for green beans in the summer. There are about a zillion varieties of this species.

Gordo: To get rid of the gas, you have to bring the beans to a boil for a little bit, and then add them to your pot.

Where do you get ham hocks at? Not carried at any stores around here. They have pigs feet and every other body part but no ham hocks. Deli ham is a little too lean.

Do the beans get done cooking such a short time? I soaked mine for around 11 hours, then added a ham bone and simmered for another 2 or 3 before I added the other ingrediants: 1/2 fair sized red onion, a few carrot disks, two dice potates and ham chunks. Simmered the whole pot for about another hour. Wife liked it, so that's good.

OK, I'll try boiling the beans seperate next time, then drain them off and add to hocks. Local store has smoked feet and or shanks.
I agree deli ham is too lean and not cured like country ham. Can't buy the old fashioned "country ham" around here. Gotta get down to Kentucky for that. I think the grocer can get me some country ham steaks if I order them.

hey bc--a big grocery store or supermarket
might not have smoked pork hocks, but a small town
meat market, butcher shop, or locker plant that
butchers and smokes hams, etc. will have them
or can get them.
our local locker plant butchers, smokes hams etc.
but to much work to clean and prepare pigs feet,
pork hocks, but trades for them, always has them.
