Likely to catch the blood...blood pudding, blood sausage. My dad used to sell a few butcher hogs to the local Italian and Portuguese communities. They would stun the hog just outside the barn and then slit its throat, carefully catching all the blood in a bucket. There was a quantity of salt in the bucket and one person would stir vigorously as the blood poured into the bucket. It was rather macabre.
 
I was just joking. We used to butcher hogs, wrestle them and cut the jugular so they bled out. Didn't catch the blood. My grandfather was old school and had done a lot of butchering and knew how to use everything if the person wanted.
