Richard. At first sight without reading further I thought it was a large size Coon~Axx microwave. With a SS lid it could cook 4-5 piglets at a minimum. Wingnut-Keith
 
Atwater Mn has a working sorghum press along with the cooker. They do a nice job displaying and you can buy some finished syrup. Darn good on cakes and tacks up for belt dressing in pinch
 
If you look very close, there is a pipe on the right side at the far end that is turned up.
Very hard to see.
it is moved down the pan in sections and when it reaches 232 degrees the last section is drained as more moves in behind it.
Use towels to stop up the divider holes to keep green juice from mixing with juice that has already been skimmed.
 
Would work for an evaporator for maple syrup I suppose if you needed it to. I would like to find a new sap pan for boiling sap down for syrup. It needs to be about 6feet long and 36-40 inches wide by about 10 inches deep. Most I find are only about 3or 4 feet square.
