Same purpose as rolling your lawn. To make it smoother.

Punches down stones, plus flattening the old grass keeps it out of the new crop which increases it's nutrional value.

Bean field are rolled all the time to push the rocks in the ground so you dont hit or run them through the combining.

I've never seen it done around here. Very little flatland in my area. Most hayfields are on slopes with terraces.
