If you have a metal faced gasket; the smoothe side goes to the block. Be sure to run a tap through the holes and blow them out so the bolts don't bottom out before they're tight. 65-70lbs in 3 steps, starting from the center and working out in a circular motion.
 
It should be marked if it matters which side up, or it will be obvious the way things line up.

You can use a sealer, but keep it thin. Aluminum spray paint is an old standard sealer. Main thing is get everything super clean. Best to have the head machined to clean up.

Torque nuts to 55, bolts to 65, then retorque when up to temperature.

Look down about 5-6 posts to "Chat", covered there.
