What RPM do you use


No idea. I run anything from just above idle to WOT with my early 70's JCB hoe depending on the task at hand.

what ever it needs to have pressure and volume for your hoe , my 3 point hoe with pto pump runs nice at 1200 rpm
 
More engine RPM gives you more hydraulic pressure and faster cycle times.
Dexterity and practice let you use that pressure and cycle time.

You are not hurting the engine running it at wide open throttle, so base your decision on how fast you want to work and how much noise you want to make.
 
I run my tractor around 1100 it has the same pull as WOT, good pump I guess

Most pumps are made to run at fairly high RPMs They will generate more heat and shorten life when run at lower RPMs
 
550 Ford backhoe. 3 cylinder. I run between 1200 and 1300. Any more than that, the backhoe is too fast. I had to buy a new pump and I went from a 25 gal. per minute to a 32gpm. It will stall the motor at 1100 RPM. This 3 cylinder will use quite a bit less fuel than my bosses John Deere. His backhoe works best wide open. I can dig more feet per hour than he can, but he can load faster than me because he has more power than I do. I have to load in 1st gear if the dirt is hard, but he can load in 2nd gear, plus he has 4 wheel drive. A motor will get the best fuel economy at the torque peek, and less at the horsepower peek. Have fun with your backhoe, I enjoy running them. I should pay my customers, ha ha.
 

Most hydraulic pumps are flow rated at 1800 rpm unless they are spec'd for special apps.
Running wide open (2000-2400 for that tractor) could cause pump cavitation if the suction side of the system can't supply enough fluid at that pump speed.
No real answer but I'd operate it between 1200-1800 rpm depending on what job I was doing.
