Man beef is so high around here I can't even afford stew meat or beef bones for soup! Somebodies lying and making a killing somewhere along the line.

People that do that, do it to save a buck. And those types of people generally try to dodge paying, or complain about every little thing, or both. And if your the source of the livestock, it just turns into a big headache. And it never fails, the recipient always says they didn't end up with enough meat. I don't raise anything to butcher size because of it.

And one more thing, most people can't afford to buy a whole beef and pay for the processing all at one time!

I hear ya.
My Dad sells all his steers direct, but its almost always in 1/4's. (Split half, not front/rear quarter) So far, no welshing on payment... and only a few complaints about cut&wrapped weight vs. live weight. And a couple people who have a hard time understanding that the number of each cut is limited (and that some cuts exclude others).
