Is submersible pump wire suitable for direct burial for something like an outdoor light?

For sure, it WILL work, but if it has to meet code, the inspector would likely rather see "UF" wire.

If no code issues, SURE, GO for it!

UF is the standard multiconductor cable for direct burial. If you're calling UF "submersible pump wire", then yes. Otherwise NO.

this "jim bob" buried 400 feet of it 23 years ago and it still works, that will tell you something.
