My friend got a deer and needed some help today

Yes they do. Depending on temperature some folks age them a week or more. I don't do that. I keep it as fresh as possible. And cool it immediately and well. Opinions on aging deer - is like fluid in tractor tires. Most people are either strong for it , or strong against it.
 
He had the deer hanging for 2 days,,the steak was good I thought. Its hard to hang a deer along time correctly,,its usually too hot,,or too cold,,if its frozen,its not aging,,,I dont like to take a chance aging it unless you have a walk in ref box to keep it in...my 02 cents for what its worth,,,lol
 
Saw this video about a year ago. Supposed to be the best meat ever. Wonder how
a steak dinner can cost $100.oo plus? Lots of lose but it is supposed to be
incredibly good. Sorry I have never eaten one. Now I have eaten really good
prime rib that cost around $125.oo for a 40 pound chunk of meat. Man that stuff
is good. Get a load of the burgers this guy makes. Droooool.
Air ageing
 
I hauled several truckloads of meat to Newyark City in the mid 90s including at least one load of swinging sheep. But everything went to Hunt's Point. The best view was George Washington Bridge in my mirrors heading into Newjoisey.
 
In my area, people generally don't age deer. Unless weather is just right. If it freezes, then you are taking a chance on being available to take care of it whenever it thaws out. And who knows when that might be if it freezes. If weather just right = 35 degrees, people might age it a couple days, but any longer and then you be taking a chance on being available to take care of it if weather gets to warm. If you had all the time in the world to baby sit it and be available, it probly wouldn't be a big deal. But most people have jobs and other obligations. My 2 cents.
 
I did some Googling, the article below seems to say much the same thing that you do. The guy is a good writer and knows what he writes about I would say. Aging it supposedly does tenderize it, personal choice I suspect is the deciding factor.
Aging Venison at Home
 
Different ways to process deer for sure. I see that he is using the beef type processing
method. We never let a deer bone touch the meat. We pull the backstrap out in one section,
along with the tenderloin. The rest of the deer we grind and make into burger or sausage,
maybe a couple of roasts, but whatever works for you.
 
we age deer 1 to 2 weeks @ 36 degrees in cooler with evaporator fan running continuous. older deer will be more tender if left in cooler 2 weeks. tenderize when cut up then freeze in vacuum seal bags. deer put up for a year till we get more next season. even a rabbit is more tender if left in refrigerator for a week. we must have some type of cooler down here!
