I have a 10' aluminum dump bed for a one ton truck. The bed needs hinges mounted on it. Which is better, making the hinges out of aluminum or steel?
 
If made of steel, they will have to be bolted on.

Here in NY state, even if you treat the surfaces, you would get a lot of corrosion between the dis-similar metals.
 
More thoughts- which may have no bearing on your situation at all.

The last time I installed a dump box, the new hoist I chose for two reasons- it was the only low profile model which fit between the truck frame and box floor cross members, and, it was a non grease model! In other words, there were nylon [plastic?] bushings in all the joints. Nice theory. But with no grease, salty moisture could work its way into the bushings/joints, and corrode/swell things. I don't know what I would have done differently, unless it would have been to drill, tap, and install grease zerks.
 
I've thought about the corrosion problem. What can be placed between the metals that won't reduce the strength and still prevent the corrosion? Bolting steel hinges on is not a problem. The other thing is that if the hinges are aluminum they will still have to fasten to the under frame which is steel, so there's going to be a contact point somewhere.
 
RTV silicone can be put between surfaces.
My thought is an aluminum hinge on a steel pin would be the minimum contact, and should benefit from a constant coating of grease, which, hopefully would get refreshed often with a grease gun!
 
Stainless steel or plastic works between. For that I would cut pieces out of the side of a plastic gallon jug or 5 gal pail to put between, then use stainless bolts.
 
Quite a few years ago, the company I worked for built a building for curing turkey manure at a mushroom farm. The steel structure was galvanized and sheet metal was aluminum. To prevent corrosion, the contact surfaces were coated with bitumen paint and the sheets attached with stainless steel screws. I have used this paint in several applications and it seems to eliminate corrosion problems.
 
If you're thinking of aluminium remember that it has a flex life before failure IRRESPECTIVE of load.

You'll likely have run into this if you've ever used a Head tennis racquet a fair bit.
