I planted some pole beans. They had a nice long pod, with a brown bean. They finally came to an end. When they dried I shelled a pile of then, and ended up with a nice bunch of dried beans. Wife is making some chile. I said use a few of the beans I shelled from our garden. She said they will not work since they are pole beans. She is going to see if they will soften up after soaking. No, some are better than others! And some produce less gas, like Anasazi. When we first started going to AZ for the winter the local Good Apple had Anasazi beans reasonable in bulk, now they are hard to find.
 
Centash ..... OR if it is grown in an environmentally dangerous area in which case it would be a HAZ Bean.
 
Go look in the grocery store at the dried beans it'll be 15 or so kinds and they all taste different.I like the mixed beans cooked in the crock pot with some cured ham.
 
When we still had the end of summer picnic at the gun club, I would make 75 to 100 pounds of baked beans from scratch. Would soak Great Northerns for at least 20 hours if possible. Here are two tricks to use. Put them in the refrigerator. The other part is you add a couple of drops of clorox. Keeps the bacteria, yeast, and stuff from growing and making your beans all icccccy and slimeyyyy.

Just say no to Lima beans!
 
In the dried bean section of the local stores they have one called 15 bean soup. In one pound bags. Or at least they used to, I haven't looked in years.
