Have a Zenith Carb of a Ford 2000 rebuilding and seen a Brass plug in the bottom part of the carb. I pulled the old one out since a new one is in the kit even though it was a pain to get out had to drill it
slowly then collapse the rest .
How do I get the new one in with out destroying it? any secret?

IIRC, that's not a plug.
It is a one way flow valve for the accelerator pump.
I've installed them with a punch the same diameter as the outside ring.
Carefully.

Would the punch damage the 3 pieces sticking up or did you use a very narrow socket the same size as the outside?

Cause mine may cave in the center if I use to narrow of a punch.

I would not use a socket because sockets have a slight bevel on the outside edge. They will seem to fit but may distort the disc. Lot of seals are ruined when driving with a socket also. Correct punch like the man said will do the trick, and carefully.
