What is the difference between chicken broth and stock? both in same add at same price of $1.69 for 32 oz. Same thing between Apple cider and apple juice? And tractors used in the production of both Chicken and fruit.
 
Broth and stock are used in similar applications. Broth is boiled down chicken meat. Stock is also boiled down and may include the bones (which are taken out when boiled down. It also includes some or all of the following: herbs, spices, and vegetables. for flavor. (all of which are strained out if still solid.) from my illustrious wife. Jim
 
You don't have to put some corny line in about tractors just to make it related. This forum went off the rails as far as staying on topic a long time ago. Some people wouldn't mind it if you put an OT in the subject line, but as long as it doesn't get mean and overly political, management seems to be okay with it.
 
There is a big difference between apple juice and cider. The relationship between the two is the same as grape Juice is to wine. In both situations, the sugars that give a sweet taste are fermented and change into alcohol and have a "bite" taste. That is why people talk about "hard" cider because it is an alcoholic drink same as wine. Packaging grape juice in a wine bottle does not make the contents into wine and putting a label on apple juice does not make it cider. You can buy cider at liquor stores and taverns, not grocery stores. A food processor can slice, squeeze, filter and pastuerize all day and not produce a drop of cider. I want everyone to drink plenty of apple juice-it's good for you. I've complained few times to store managers about this huge practice of mislabeling.
 
Cider is squeezed and bottled and it oxidizes to a darker color. Should not have additives usually. Many people think true cider is an alcoholic beverage, but like dinner/supper, the terminology is just not that clear anymore. Apple juice can have preservatives, sugar and other additives. I think it is pasteurized but not energetic enough to go out and look.

Broth is the liquid from cooking, usually meat. Stock is something more deliberately made, usually from meat but there is vegetable stock. It is the base of a lot of fine dining cuisine. Usually made from bones and non-edible items of the carcass but can also be made from meat. Usually you will have celery, carrot, onion and parsley in the pot. It is not boiled as that makes it murky...a low simmer for a long period works best. If you want it really clear you can make consomme...basically the same thing but has been clarified to the extreme.

And yes, I supported myself in kitchens at one time of my life. :)
