Waaaay O.T. fixing Zuchinni

I picked up one at the farmers market last week. Last night I egged and floured some slices and fried them. What other methods do you use to fix them? As I post this, I am going to make an omelet with some cubes and some meat and of course eggs. Any other suggestions? Thanks Roy
 
we are making aweet pickles tonight from zukes.Taste just like cucumber bread and butter pickles do,,some say they are even better than made with cucumbers.
The jars on the left are a blend of squash and some carrots .

I like to use fairly small zuchinni... quarter them and cute into bite sized pieces.

Saute in a bit extra-virgin olive oil:
Some sliced onion and diced sweet pepper...
Then add a bit of crushed garlic clove and the zuchinni - saute until "just done".
Season with salt and pepper (or use cayenne pepper if you like a little zip).
Add a squeeze of fresh lemon juice over all.
Top with a bit of freshly grated Parmesan cheese.

Great as a meal in itself... or served as side dish to grilled steak, chicken, fish or chops.

Add them to your favorite shish kabobs on the grill too.
Baste with olive oil or real butter to your taste.
 
Slice them into Spears and make pickles. Slice and cook on a hot griddle for a quick side. Zuchini parmesean is one of our favorites. Grilled is great, JulI Anne and add to twice baked potatoes or shepherd pie... my wife makes zuchini cornbread that should have a sin tax.
 
Grab an armful off the plant, walk across the yard, and whip 'em into the sheep and goat pastures. Come back in a few minutes, all taken care of.
 
Diced with onions and cooked in tomato sauce is my favorite. I remember once a fella that I worked with told me about burpless pickles. Dilled pickles I really love, especially home made out of a crock. Burpless pickles? He said he'd bring me some and did the next night. Small zuchinnis about the size of cucumbers.

Twig Boy's Coconut Squash Pie
Makes 2 Pies

3 cups summer squash, cooked
1 1/2 cups sugar
3 eggs
1 stick butter, melted
1 tablespoon vanilla extract
2 tablespoons all purpose flour

Topping
1/2 cup shredded coconut

Blend ingredients, pour into pie shells. Bake @ 350 for 25 minutes.
Remove from oven, sprinkle with coconut. Put pies under broiler till coconut is golden brown. Enjoy!

I got this from a kid I worked with years ago. It's pretty dang good.
 
My 1st wife would take the BIG ones and split them lengthwise. She would then carve out the seeds and refill with Chili with a little cheese on top. Next she would throw them in the oven and bake them. Made a great meal in its own bowel.
