Grinding ear corn

'Picked this year about 3 weeks ago.......moisture was 15-16% in the grain. My question, how much moisture will the cob have in it and how soon can I safely grind this without having to worry about too much moisture in the cob thus causing molding?

At 15% - 16% kernel moisture the cob moisture will be near 20%. At kernel moistures higher than 13% cob moisture increase exponentially, below 13% cob moisture decreases exponentially, kernel and cob moisture are equal at 13%. You can grind it whenever you get ready but it is never a good idea to grind more than a weeks worth of ear corn at a time, for several reason, even if it is a little wet it might go through a heat in the sack or bin but soured corn won't bother cattle, it may affect sheep so,if you have any you may want to just grind a couple of days worth at a time until it is below 13%.
