Larry and you other experienced gardeners, how do you determine when they are ready to pick? Thanks for any pointers. J.

Peppers can be picked almost anytime you need some.

Bell Peppers can be picked green, or you can wait for them to turn red.

Not sure about banana peppers I think they may turn orange if you leave them on the plant that long. Not sure.

Do the banana peppers start out green then? I was thinking they were yellow and then matured to orange.

My sweet banana peppers and Hungarian Hot wax peppers start off a Lime green then turn yellow, then orange and finally red.

Not really green, kind of yellow-green and turn bright yellow. This orange one I had last week is the first I've had in years. I leave them on the plant until they get some size to 'em, this one turned orange instead of getting longer.

Your right OH Boy, on that peppers can be used anytime, they will only get bigger(to a point). When they change color that is getting towards the end(of prime), rotten(the next step) is too far.

Bells can be any color in and under the rainbow. Red, yellow, Purple, cream, white, black, brown, mixed(red and purple for example)........and so on....

Bananas there are two types hot(Hungarian wax) and sweet. most of either only get to only so big (around 5-6inches x maybe 1inch (tapered) round for BIG ones) and then change(some do start changing early). Have several every year that start to redden on us, still good.

Everyone has a preference, mine with bell peppers is to let them ripen until fully red, they're really good, don't care for em green all that much. The best thing about letting them ripen fully is the vitamin C, lot more than an orange has.

After turning yellow they will turn red Sweet bannana will be sweeter but the Hungarion ones get hotter. They look the same so unless you know which one you have be careful.

All peppers turn from green to red or orange when they ripen. They can be picked & eaten anytime, but the redder (or riper) they get, the sweeter they are. I think the natural sugars in them increase as they ripen.
