Coming home from work last night, and a deer committed suicide by running into the side of the truck in front of me. Deer T boned the truck and broke it's neck. Owner of the truck didn't want it, so I got permission to take it from the police officer making the accident report. Cut it up today and got 80 pounds of good venison. Every thing's in the freezer except 2 steaks for supper tonight. Deer hunting wasn't good for me this year due to my work schedule and the snow and ice storm during hunting season
 
I know absolutely nothing about deer other than they pull sleighs across the sky! Butttt, do they not have to hang for a while before butchering? (like cattle)

It's nice when you can hang them, but unless you have a cooler, sometimes impractical. And, there are so many that go to the butcher shop at one time that they have to move them through quickly.

There is a list you can get on here in the Twin Cities Metro to get called for 'grilled' deer.
I keep meaning to get on it but never remember to do it.
 
Is ther such a thing as good vinison? Around here, they talk about how good the deer summer sausage is but they put GOOD pork in it. Why not just eat the pork?
 
I have eaten road kill before too. Take it out of the freezer about 3 or 4 days before you use it so the blood can come out of the meat. I wash it under cold water too.
 
Deer, cattle, or ANYTHING do NOT need to "hang" at all. People have just been conditioned to believe it "tenderizes" the meat. What it actually does is start the rotting process. We just butchered a steer yesterday. Got him all cut up, but ran out of time. Set buckets of chunks in a fridge overnight, then ground it this morning. Had fresh hamburgers for lunch this noon. Nothing better!
 

One almost got me while snowmobiling after dark last winter. I saw him coming at me from the side for all of two seconds, I braced for the impact and at the last split second when about a foot away he turned.
 
Heart and liver are in the freezer.
Most of this meat will go into summer sausage.
Have cut up road kill before, so I know what bruised meat looks like.
