OT, Holsteins and CAB?

Yes, if they are 75% black and meet the quality grade required (mid to upper choice). There are several feedlots that produce many thousands of CAB cattle a year using Holsteins. The lack of muscling allows a high marbling in Holsteins just like it does in Angus.
 
Depends on who's making the decision. They are supposed to be a beef "type" animal. But that is a fairly subjective criteria. More likely to have too big of a rib-eye to qualify. Dairy breeds can make excellent beef, they are just not as economical to grow. Reminds me of a premium Angus burger I had a McD's once. It must have come from a really good cow, she must have been at least 15 years old by the taste of it!
