2000 GMC 2500 (5.3) Does not come back to idle for a few seconds after backing off the gas. What do I look for?

Remove the throttle body and stepper motor assembly . Clean out the ick and goo that has slobbered in from the PCV port.

We need to see what the Idle Air Control valve is doing . If it"s being commanded open or physically hanging up or open . Several inputs can affect it . Power steering , park neutral switch , a/c input etc. any codes ? Not sure if this is drive by wire or not . If so could be Throttle actuator or APP . Gonna need a good scanner to trouble shoot this, not just a code reader .

Don't know of anything specific - but I'd say at least do the basics:

check engine codes first - even if the check engine light isn't lit.

check fuel injector pressure

clean mass airflow sensor

although I tend to agree with gene that modern engines can be too complicated to work on - the upside is you usually have some great diagnostic info available to you telling you exactly what's wrong.

i agree with gene take it to a dealer, the more you mess with the newer trucks, the more its going to cost to actually fix it, if your like me, and dont want a truck you cant fix, you have to go pre 1990,

There is no linkage. They are fly by wire.

Linkage? What linkage? It's a stepper motor direct coupled to the throttle shaft.

I would look for the nearest dealer as the days of the shade tree mechs are gone it doesent take much to mess up these new systems that be costly because of some dumb advise.
