apple butter making

Made 15 gallon of apple butter at our place in early november with friends and family. A great time was had by all.

Great pictures. I make roughly 4 qts per batch. Use my crockpot.

Same question, why do you put your jars upside down?

The women tell us by turning the jars upside down the hot apple butter will help seal the jars.The pipe looking thing in the kettle is the handle of the stirrer.
 
Holy Cow! What a cooker! Never saw anything like that before. We've used the big copper kettle, but always outdoors with a fire built under it. Did you make the "stove" under the kettle, or is it a commercially made item? Very nice setup!!

Turning the jars over brought back good memories of our neighbor lady (now deceased). She used to help with the apple butter, and she insisted on turning the jars over after filling them.

Thanks for the pics. , I haven't seen anyone make Apple Butter since my Mother made it when I was a child.

As the HOT Apple Butter cools, it shrinks, thereby creating a SUCTION. By turning the jars upside down you're putting a liquid against the lid forming a seal. If you didn't turn them over, the suction would draw AIR into the jar, and when stored the Apple Butter would SPOIL & then ferment.
