Way O/T Summer squash

we have been vacuum sealing with a foodsaver and freezing, this is the first time so we will see if it works. My wife also canned some. we have had plenty but it is slowing down now.

Google zucchini jam... it uses grated zucchini and I think apricot jello or something.

A couple guys on this site have dehydrators and dry slices and season them for chips. *Thinking you could do the same thing... and utilize them in soups or hot dishes.

Maybe it can be blanched and then frozen... assuming though, that freezing may tend to make it mushy when it thaws.
 
we have froze some tonight as I am typing! blance the slices for 3 min,then put in icewater,than freezer bags or containers,It does get somewhat mushy when thawed,but still tastes good.We also made some chips in the dehydrator,they were pretty good,
 
I feed all my excess to my pigs and then eat them later on :)

I've tried freezing it, but have never had good results. If I get the craving for zucchini in the winter, I just buy some imported from a warmer climate.
