Most prefer the factory manual, if one can be found. But I've used ITT (aftermarket) manuals many times, and have found them to be adequate.

When the factory manual dedicated 400 pages of specs, instructions and images vs. an IT manual that covers several models with 125 pages. The choice is clear. A few extra bucks for the factory manual should not bankrupt the job.

Simple answer is neither. Both leave things out so if you want the most info you need both. Now if you only get one then hard to say since it depends on which tractor and which company both as I said are not 100% complete and one company manual can be better and the next worse

It actually varies a lot from one mfg manual to another. Some of IH manuals are very barebones and others are really good. For instance, the manuals on the injection pumps are really good and some on the gasoline engines have very little. Now, take a Case manual. It will show you exactly how to take things apart and put them together but tells you nothing about how anything works. You need the training manuals they have to get that information. IH would tell you how things work and not how to take it apart. The I T manuals often have little hints and information that mfg manuals does not have and then tells you nothing about how it functions. In other words, you need to look at one and decide if that is what you need or not.
