Sunday a friend of mine stopped by so for kicks I made some cornbread to go with coffee.
I add a can of creamed style corn plus a little extra sugar to the batch. Serve it warm with butter and honey. I sent a few squares home with her. Good thing as I haven't been able to leave the darned pan of the stuff alone. Just ate the last two squares of it for lunch.
Sheesh it was good.

I also add a small can of cream style corn with two packages of jiffy mix. Sometimes an extra egg to hold it together.


Try this, put a greased skillet in the oven as it warms up. When you add your mix it will already be warm and it will help make a crisper crust on the bottom.

Also, I drizzle the top with honey before putting it in the oven. Makes another nice sweet crust on top.

Now that I think about it, I think I'm making corn cake. lol.

I like it done on a campfire too. I have a cast iron "dutch oven" that has a lid with a ridge to hold hot coals on top along with the ones underneath. During the winter I bake skillet fulls on top of the woodstove and freeze what I don't eat right away.
 
Can't post a picture, and I'm away from home so my recipe is unavailable, but cornbread just ain't cornbread from that stuff you get in a grocery. I grind my own with a burr mill that's been in my family for generations. It takes some time, not much work, and it tastes like CORN, not the box it came in. I'm sure what you get from a local flour mill that makes their own is just as good, but I like mine.
