hey Dave2 or anyone else,I know you said your wife makes good apple butter,I would like to try her recipe if she didnt mind,I got some apples from the produce market and want to make some thanks ///Larry
 

Can't remember if it came from joy of cooking cookbook or something from google....

Anyway, it was one that called for a bunch of vinegar, unpeeled apples, and a ton or so of sugar...... and short cooking time. Real simple, she cut the sugar by more than half. I'll ask her if she has it written down or for the link to the recipe.... I won't see her for a few days tho....
 

I'll only make ours with cider, no juice but here it is for what it's worth.




APPLE BUTTER

6 Lbs. tart apples
6 cups apple cider or apple juice
3 cups sugar
¼ teaspoon cloves*
½ teaspoon cinnamon*

* We reduced the amount of cloves and cinnamon. The original recipe called for 2 teaspoons of cinnamon and ½ teaspoon of cloves.

Core and quarter apples; cook with cider until soft, about 30 minutes. Press through food mill*

Boil gently 30 minutes, stir often. Stir in sugar and spices. Cook and stir over low heat until sugar dissolves. Boil gently, stirring often, until desired thickness. About one hour.

Pour into hot ½ pint jars. Adjust lids, process in boiling water bath for 10 minutes.

* OUR VARIATION.
We quartered the apples and ran them through our Kitchen Aid raw. We then added the cider and spices and boiled it slowly until it was thick enough to jar.

This worked very well.
 
My personal twist on any applebutter recipe would be to finish cooking it in a crock pot. Way too easy to burn it on the stovetop, even in the best of pans.
 
This the only way to make Applebutter the the way our Grandparrents did and with the same Copper Kettle is a 15 gal usualy get 10 to 12 gal. We make every year in October.

When we do a boil, we always use our big cast kettle. Seems to have less of an acidic flavor than the copper kettle.
 
My wife's parents always made apple butter using the copper kettle her older sister has that kettle in Florida and will probaly never use it.

Place Apple sauce in your oven on low heat. Spice it the way you like it. Use a large flat pan to allow for evaporation and reduce the water. It will turn brown as it cooks. Ed
 
Larry, you can make real good apple butter in your wife's crock pot. If you want a larger batch, use one of those big white oval shaped cookers like you see at church dinners. To check to see if it's cooked long enough - put a spoonful in a plate and let it sit for a minute. If any liquid seperates from the mass, it needs to cook some more. Ingredients can be red hots, cinnamon, sugar, oil of anise, and I think some folks (not us) use cloves, and of course don't leave out the apples. Cooking it in a traditional copper kettle is neighborhood fun, but requires lots of stirring and fire tending. We used to start the fire before the sun came up, and be jarring the finished product as the sun went down.

We cook 6 bushels of apples, 3 jonathan,3 golden delicious in a 20 gallon copper kettle. Peal, core, and quarter the apples the evening before. have fire going and apples in kettle by day light next morning, stirring constantly. When cooked down to desire consistency add cinnamon sticks and sugar to taste. Amoumt of Sugar will vary as to the sweetness of the apples. We do ours in September when apples are ripe on the trees. Makes 50-60 quarts
 
We make apple butter every year. ABout 3 18 quart roasters full. I don't do a lot of the spicing but i do the stirring and grinding of the apples.
