The heart is in the pressure cooker as I type this. I like to cook it for a while as they can be a bit tough if you don't.
Got two white onions cut in half in there.
Later I'll take the heart out, throw in some potatoes, carrots and rutabaga and cook them for a bit.
Um Ummm!
Deer heart sandwiches for lunch tomorrow too.
Slice it and put it on good whole grain bread with butter and lettuce and a slice of raw onion.
Lunch like that makes you look forward to going to work.
Gotta cut up the liver and get it in the freezer tonight too.
I only saw a fawn this weekend but my buddy took a nice big doe. Two more weekends to hunt though so I'm hoping to get one myself.
Oh, and we did go recover the doe with the 4000 and the 3 pt boom pole - just to keep this on topic.
 
a fellow at work told me a funny story, He was dressing the deer out in his back yard, He carefully took out the tenderloins, layed them on a plate on the table in the backyard, Went in the house to put a pan on the stove,diced up some onions and got them cooking in the butter,came outside to get the nice tenderloins,and saw his dog licking the plate clean
 
I have never tried deer heart. Will have to give it a try. Love venison. Only hearts that I have had that I like, pork heart, but not nearly as much as beef heart. Dice, boil, drain most of the water out, mix with and simmer in cream of mushroom soup, put over rice. Love it.

Thanks for the heads up and recipe. I will give it a try.

Just had one a week or so ago. The DNR officer that hunts my woods saves the hearts when he takes out a deer. I put them in a cooking bag after cleaning them out well and pack them with chopped onions. I cook them in the oven until they are tender. I slice them and make sandwiches with slices of onions and pepper jack cheese on rye bread.
When I came home from the farm a coupla hours ago The DNR officer was on his way back to the woods and said he had his eye on a huge doe and he would bring me the heart.
 
Yeah, "note to self"- don't leave ANYTHING where domestic critters can get it.

Wife baked a salmon last night, left it on the counter by the stove. I had to remind her- best case scenario, cat eats it. Worst case, cat knocks some on the floor, dog eats it and gets salmon poisoning and dies.

Turned out OK, at least for us- we ate it. Cat considers that the 2nd worst case scenario- only thing better would have been to take the dog out in the process. Dog is blissfully ignorant of the whole affair, bless his heart. He's not the sharpest knife in the drawer, but then we didn't expect much when we got him, and we haven't been disappointed.
 
Does sound good, I like to cut the heart up into small pieces, add peppers, onions and garlic, when all is ready add eggs and scramble it all together.
 
Back in the 60's when Dad was alive, and the pheasant limit was 5, cleaning 10 birds was not too big a deal, We could do one in 2 minutes.10 in 10 minutes.
One Sunday evening we came home with 10, laid them in the grass in the back yard, and left the black lab "Gypsy" to guard them. I took one and gave it to the old maid school teacher next door.Dad fixed us an adult beverage.
We came out and set to work cleaning the birds. After I did my 4th bird I said "I'm done,and Pop said no no, I'm doing my fifth and there's one more there. We recounted and sure enough 10 roosters. I took the tenth and went back to the teacher, figuring she left on the step and Gypsy brought it back home. SHe said, No, I've already cleaned it and it's in the fridge. So I gave her that one also.
We never did hear who lost one of their pheasants but we always laughed about the night Gypsy thought he was going to catch hell for losing a pheasant and went door to door til he found another. And that dog WAS the sharpest knife in the drawer.
And there's a story of how he brought home a prime rib roast, in meat locker white paper wrapper, one Christmas morning.
 
The Mirro Matic pressure cooker. Have my Mother's from the 40's. The crock pot of the 50's but it only took 40 minutes to cook you meat.
I do ducks, pheasants, deer roasts, ribs , and can up pheasant noodle soup in pint jars in mine.
Killer r ecepie for that pheasant soup to anyone who wants it.
 
I'd be happy seeing a pheasant to make soup .Iowa is a wasteland this year. Birds are scarce.. time for a road trip ,,gotta keep the dogs happy .
 
Whenever I cook deer heart, I fry it in bacon grease in thin slices dabbed in flour to make the outsides crunchy. Add a little butter and onions and a cap full of pure vanilla extract. The vanilla gives it a real nice sweet flavor.

Teddy, I would like that recipe too. I like picked eggs, pigs feet, gizzards and probably would like pickeled deer heart too.

Trim the fat & valves off. Cut in bite sized pieces & cook till done. No pink in the center. Make a brine using 2 cups vinegar, 1 cup water,1/4to 1/2 cup sugar,1tsp salt and a heaping tbsp pickling spices in a bag. boil the brine & let it cool. Put the meat in a jar with sliced onions Add the brine and a half cup of the juice from the cooked meat. Let it set for a few days. I keep it in the fridge cause I like it cold.

Had a coon hound once....Smartest thing you ever saw... Just show him a stretching board and let him off the leash. He wouldn't bark tree til he had a coon the size of that board..... You could show him a small one and he'd pass up everything til he got a small coon....

Just downright famous.he was... TV folks came out to interview us and do a piece on him, brother got all flustered and let him off the leash. He ran around the house and on the porch where mom was ironing clothes. Took a long look at that ironing board and took off.....Haven't seen him since..........
