How do you properly check a coil or condenser to see if its good? Seems like alot of these get replaced when they don't need it.
 
Find an automotive, small engine, or marine repair shop that was in business when coils & condensers were used.
If they still have their Merc-O-Tronic tester or equivalent the components can be tested.

You "properly" test a coil or condenser with an actual tester made for that purpose. However, an ohm meter test can tell you if its definitely BAD/Open but it cant necessarily tell you if its good because that often happens at high voltage and/or once up to temperature. The old analog ohm meter kick back test is pretty good for testing a capacitor although it don't give you the capacitance value like a real capacitor tester. Similar an ohm meter can show if a coil is bad/open.

I use my Sun 740 Electronic Engine Tester. It has a capacitance tester along with being able to check resistance of the coil and also power it and display the output on the scope to check for internal shorting under load.
 
Best is get one from NAPA make sure its either a ECHLIN or BLUE STREAK or Delco Remy as brand x is junk. Lots of condenser problems nowdays becaure too many places sell brand X
