block water headers

After playing with my JD G and GP for 24 years,I bought a 400d and found the cooling system very dirty.I removed the rear water header which has part of the header rusted away.I went to my local salvage yard and found thin steel and 1/4 inch steel plates.which should I use and why do they direct water down away from the head?
 
They dirrect the coolant down and around the lower cylinders and then the coolant rises up to the head.
Last ones IH used for the headers was the thick ones. Around half the 400D tractors came with the thin ones before change over. Some MD used a shorter baffle inside the cover, so if using a thin cover get the same length baffle as the 400. When using the thick cover some engines that had the thin covers need the cross shaft bracket ground for clearance.
