Thanksgiving.....not equipment related

Hey all,
I apologize for this not being a I/H related question. Posted over on tractor tales, but hought I'd ask here too. Anyone got any tips or tricks for roasting a duck. Never did it before. Thought maybe someone may have done it before and would be willing to share their expertise. Thanks in advance and Happy Thanksgiving..Shawn
 
Okay, Shawn. I'm no cook, but just in case no one else responds, this is what my wife's cookbook says for Roast Domestic Duck:

1 - Preheat oven to 450F.

2 - Make sure all feathers and pinfeathers are removed.

3 - Rub the duck with garlic (optional).

4 - Place it on a rack in a roasting pan.

5 - Stuff it with "celery stalks and sliced onions or a quartered apple, which you remove before serving" or with an apple stuffing.

6 - Put the duck in the oven and reduce the heat at once to 350F.

7 - Cook until tender, allowing about 20 minutes to the pound. (Alternatively, roast until the internal temperature is 185F.)

This should be enough to get you on your way.

Appreciate the info. I got a recipe book, and I'm prolly just gonna follow it. Everyone I know has never had any luck with em. Figured I'd give it a shot. Got some interesting and funny responses over on the tales board.
