I am freshening up a 51 M; is there a particular degree thermostat to use or is one even needed

Doc,

I dont have the manual in front of me, but I want to say that its a 160 degree stat. You definitely want to use one.
 
They do need a stat. As Clarkbug indicates
I would use a 180 degree stat, and I would also restrict the bypass tube around the stat in the housing to about 3'8" hole. The original bypass is so large that the tractor over cools resulting in poor fuel efficiency. Many never see the Normal zone on the temp gauge unless working a plow or chopper in the summer. Jim
 
Be sure to use the original style thermostat, not an automotive style. 180 degree is good so the engine will get up to proper operating temp.
