We also put a little vinegar and water to suit,I have a patch that was here when Iwas a little kid, I am 74 now. Don't dig the first year. when you do dig it seperate the crowns and plant along with small roots. iIt will last for years. You can get it at some nurseys( mail order type].
We freeze it and have horshradish year round. If you freeze in glass leave room for expansion.

I add the vinegar and a touch of salt...
Also grind it on the porch....gets a little wicked in the house...

I bought 2 roots in teh store and cut them in secvtions. I planted them and I was out thre a little while ago and 5 of them are shooting up

:)

My mother used to cook the greens from the horseradish plants in the spring time of the year. She boiled them and we ate them with boiled potatoes and butter and vinegar and salt and pepper. (That was depression years food. Aren't the roots supposed to be processed in the fall of the year? I have some horseradish in my garden and I am thinking about grinding up some for old-times sake. Thanks for the memories.

Not any help on the recipe but do be sure to grind it outside . Yrs. ago someone gave us some roots that we still have a nice patch from . My wife took some to grind and did it in the kitchen , when I walked in it took my breath away . She was cryin and the whole house was filled with the aroma . Got all the windows open and turned on some fans and it was a few hours before it was safe to go back in there . Dont remember but I`d say it worked as good as any bug bomb on the market !!

We dig it in the fall also. Just don"t make the mistake my daddy did. He thought he wanted to move it to a different location in the yard. Well we then and still have 2 patches. You can"t get all the roots. We also just add a little vinager, salt & water to taste. Another little tip is strange but helps. Stand between the processor and the wind, so it blows away from you. Then put a fan on low behind you to help push the tears away. My Great aunt taught me how to do this many many young years ago. THanks for the chance to relive my younger years.
